I'm a small Farmer, a “Jibaro”, from Puerto Rico, located in the border between Pasco County and Hernando County, in Florida. I have spent the last two years studying the plants which produce the product which I sell. I pickle my product. Varius types of Aji have been incorporated in Latinos cuisine worldwide for centuries. Specially in their "Sofrito." A blend of vegetables and spices added to their cooking.
Aji Cachucha also known as ajicito, which mean small aji pepper, may look like the Habanero and Scotch Bonet peppers,
but its bite is mild, ranging from 1000-5000 (SHD) on the Scoville scale. In my journey I've become very familiar with the plant and product. Thru seed selection, I've grown a number of healthier plants, which require less water and produce a larger Aji or "Ajizon." Thru trial and error and combining different types of compost with Floridian soil, I've created a soil which ensures success in growing the plant. My product is naturally grown and one of my goals is to certify my product as organic and to get FDA certification.
